Greetings all,

First off I wanted to introduce myself and thank you all for the information I have been reading up on!

I’m Milton and I live in Miami FL. I consider myself a novice BBQ’er and handyman. I design and build Data Centers for a living, but I like to tinker in my garage.

Currently I am using a big box un-modified Master Forge grill (the one you can crank the handle to raise and lower the fire grate) to do most of my smoking using the indirect method. I have been successful with Boston’s and Pork Loins, but the rest escapes me because I can’t manage the fire correctly do to the amount of air that comes in.

I order to get the smoker I want, I am going to have to build vs procure it. My wife will have a fit if I spend $2K on a smoker. LOL

Since I am always up for a challenge, I am planning on procuring the small gravity feed smoker plans with the CNC files. My plan is to have my local supplier cut the sheet metal and plate for using their CNC/water jet systems. I don’t have all of the tools required, and I think it will be cost effective for me in the long run.

So in the mean time I will be reading and asking questions as well as sneaking in new tools needed to start the project. I also need to brush up on my welding skills, it has been years since I ran a bead.

I think for a practice run, I will build a UDT for my daughter. That way I can get the practice in.
