Smoke vs Thermapen

Love both products, but oh sh$t ! I’m getting two different readings ! Got the Smoke plugged in to the big bird and a pork loin. Also checking temps with my Thermapen. Smoke reads different than Thermapen. Same thing when it was plugged in to a Brisket earlier this morning. Final stretch of today’s cook...Which one do I go by ?

I would trust the thermapen. Could be a bad probe .


If it's tourist season, how come I can't shoot 'em?

Mo, how much of a difference are you seeing? 2 degrees? 50 degrees? Like Pete says, trust the Thermapen, it's awfully reliable.

Do you know how to do an ice water to boiling water test? That's arguably the best calibration check for home use. Obviously, that's not going to help you now, but I'd be doing that pretty quickly in your shoes.

I thought about the probe having the greatest chance of a problem. But I stuck with it. I had pretty big temp diffs, some close to the same area and some not, that’s why I got worried. Got lost in doing a variety of things so Maybe it was mostly from checking diff areas of the meat. I’ll do a calibration test later. Decided to finish up by splitting the difference, and using my eye and gut to know when to pull the meat, like I used to before I found all theses nice toys.

My thermapen is spot on....they come calibrated and certified.

I would test them in boiling water to check them. Should be real close to 212F, with a minor difference for sea level.
