Smoker build questions

Post by Southshoresmoke » April 29th, 2018, 6:29 pm

Hi all. New to this page. I am currently building a pizza oven bbq and smoker out of concrete blocks. I am using 12” gas pipe underneath the oven and bbq to feed the smoker. I have a few questions tho. I read somewhere that the smokerbox should be 1/3 the size of the smoker itself but do I need a way to regulate the smoke leaving the box or will the damper in the chimney be enough. I was thinking about insulation for the smoker itself I was going to use adhesive and screw some aluminum to the bricks as a heat shield.will that be enough?? Any advice will be greatly appreciated, thanks

Welcome aboard!! A vertical cooker doesn't require as large of a fire box because it uses all of the heat from the FB. I'm guessing that you are planning on burning wood so it'll need to be large enough to contain the wood splits. You probably won't need a baffle in the throat (opening from the FB) but you'll need a diffuser over the opening to allow the heat to spread out. You'll have to control the cook chamber temps by regulating the size of the fire and it'll take some time to learn what size fire is needed. I'm not sure about using aluminum as a heat shield but I'm also not exactly sure where you are wanting to use it. In the FB, a fire brick would be a better option. I haven't built one like this so these are just my opinions.

Thanks big t. I have looked into it more and thinking about getting some 1/4 steel and some kaowool hopefully isolating the cement blocks. The Fb will be offset from the chamber, I will keep you posted and will probably need further advice sooner rather than later

Will it be safe to install insulation behind the two? Do I need to worry about chemicals or toxins from the insulation during smoking
