The drum my brother picked up for me in Plant city is a bit rough. Several dents and pitted from rust. I thought about putting it on Craigslist to get my $27 back and getting a nicer one. Pretty paint won't make it smoke any better so I decided to run this one with flat BBQ black. 5 minutes with hammers and I had the big dent in the bottom rim fixed so I was off to dig though the tool boxes for the 2" hole saw and arbor.
Finding the hole saw and arbor with out too much fuss it was time to lay out the holes according to the high quality technical drawing provided by Rod. I amazed myself again by finding a soapstone without any throwing or cussin and centered my marks 20" apart and 3.5" from the bottom.
The 1/2" Makita made short work of the 3 need holes and I was ready for some pyrotechnics.
Somewhere was a post about Cardboard burning hot and was great for the burn-out. A raid of the recycling bin netted more than enough to fill the drum. I already had a 3,000 degree propane torch from a roofing project and this was a great excuse to play with it. Being dark I was able to see when the drum was just starting to glow red under 4" blue flame of my little toy. The black paint on the drum burnt-off to a white ash fairly easy but the red epoxy on the missed matched lid took quite a bit of heat. I got it too hot and the lip started to flatten out on one area. More hammer time tomorrow. Phase one completed. :-bd

As hot as you got it!! Don't try to wire brush or grind the coating. Use comet cleanser and a scrubber pad with water and the red coating will wipe off. Don't know why but it works. It must be burnt first, lol when I read my post it sounded like I was saying it wipes right off pre burn. Not.

I should've warned you about getting the lid too hot. I've got them so hot that they warped out of shape and I had to get another lid.

Comet and a scotch pad worked like a charm. The red epoxy washed right off the lid. There was a brown coating on the inside of the inside of the drum I thought was surface rust but it washed right off. The black metal under the paint shows the drum was treated with a rust converter. Rust treatment is usually done with a mixture containing Tannic acid. The acid chemically converts the reddish iron oxides into bluish-black ferric tannate, a more stable material. I can't find any info showing tannate as toxic so I'm going to roll with it.
Here is a pic of the mock up showing the black surface. The shinny spot right of center is where I ground off some paint before burning; you can see the chemical conversion goes deep into the metal.
I decided to screw the vents instead of welding so they can be salvaged if the drum continues to rust out.

By stopping the step drill just short of cutting through the drum with the correct size step I was able to thread the gauge into the drum. Should be a tight seal with just a dab of food grade silicone.

Here is a pic of the 1st ugly smoker I used. Huge culvert buried 3 ft in the ground at Big Ten hunt camp in Ocala. Used roof tin for the top.

Did the seasoning run Thursday. 1/2 basket of Kinsford briquette held 400 F steady for 4 hrs then dropped off to 300 by hour 5. I opened the vents and let it burn out while I ran errands. Lava-lock gauge pretty accurate.


Charcoal chimney makes a great wind break.

Spatchocked a 6 lb. roaster and grilled it at 300F.

Was guessing about 3hrs. Checked it at 2hr and it was a bit over done@ 175F. Give me an excuse to buy a remote thermo.
Still nice and moist and was a great hit with the family.

Still getting the feel for time and temperature. Dinner came out a bit overdone again tonight.
Did some rib-eyes with sweet tater JoJos and acorn squash basted in peanut oil with Montreal Steak seasoning.

I figured 2 hr @ 275 degrees for the squash ad 1/2 hr for the steak with a couple minutes right on the fire to sear them. Think I should have cut time by 15 to 30 minutes or may be temp down to 225. Veggies were burnt on the edges and steak was already at 140 after 1/2 hr. so I served it without the sear. Family thought it was Yummy.

It's trial and error, just don't give up and you'll figure it out. Those steaks look pretty good to me :beer:
