firewood or charcoal in UDS?

Post by vunsb » April 30th, 2015, 5:29 am

Hi.
First of all I want to say great job making smokers... here are some amazing projects!
So after watching videos for a while and reading posts I decided to try and build my own UDS. Everything seems fairly easy but my question is does someone use firewood instead of charcoal? I have plenty alder growing around so was thinking about using alder firewood with some raw alder for smoke. Any suggestions? or UDS with firewood is waste of time?

Welcome to the crew! As for the question an UDS burns a very small sort of fire, so charcoal is the main fuel but then add wood chunks for flavor smoke. Always make sure the wood is well dried from sap or it will cause creosote on your Q.
