Korean BBQ in the Gravity Feed...

Gonna try a brand new recipe! Courtesy of heirloom bbq in Atlanta. Cody was nice enough to explain their process a little more detailed and give some advice on toning down the heat.

It turned out very good. So much that my wife had seconds.

Things I learned:

Debone the butt then freeze for a couple hours and then slice with electric knife.

I tried freezing then slicing and the bone was too much in the way and my slicing knife couldn't maintain an even plane which made for uneven cuts and then some uneven cooking.

I cut almost all the Sriracha out and I won't do that next time. Probably go with 1/4 to half cup. I also cut the Korean pepper in half and will up that to 2/3rds.

The slaw was not to my taste. I have better recipes and will stick to them in the future.

All in great experiment and definitely going into my roledex of BBQ recipes. It is always nice to put the mini through it's paces and cook something outside the box every once in a while.

P.S. the KB sauce is good enough to put on almost anything.

That's awesome! Local store had 2 pack butts for $.99 a pound. I got them to slice one up for me to do the same with. Will probably break it down into 3 slice packs and make the sauce then cover them and freeze em.
