y first (and only thus far) Smoker build

I made this "prototype" vertical cabinet smoker last year with the help of a local welding shop here in the Philippines. This was in preparation for opening a smokehouse and casual dining restaurant.

The overall design was based on a Coolabah that we got on a local website. Since the restaurant is on the second floor of our building, we needed something that would be able to smoke high volumes of meat with minimal attention and it had to be relatively safe operating indoors... Since I didn't want to have to experiment with local woods, I knew we would be using imported wood chips, so going the route of using gas was the easiest, and least expensive.

The first task was to build the base, which also houses the gas burner (now 2, but initially only 1) and smoke box.

Construction is all done using 1.6mm steel sheets and 1" angle iron welded together. If I ever finally get around to making a "final" version, I will use stainless sheets, but the steel works great and has a nice rustic look on the outside. Inside, there is so much grease that there is zero rust...

Once we were okay with the base, we started on the cabinet proper.
