Highest temp for smoking (not grilling)

Post by Mo Smoke » March 29th, 2019, 2:35 pm

I know some guys cook hot and fast. I like to cook chicken that way but I use a grilling method, direct heat over coals and wood. But when I smoke chicken using indirect heat with my reverse flow My cook temps are much lower. I want to smoke some chicken at a high temp. Can’t wait to see how big a fire I will need to maintain high cook temps. What’s the highest temp u have been able to maintain when smoking on your cooker?

I try not to get my FB too hot because you risk warping something. I normally cook between 250-300 degrees range in the main chamber but I've had my WC up to 500 degrees by opening the damper from FB to WC and it was a relatively small fire in the FB.

I never cook over 250-275. Anything higher and I move it to the grill.

With the exception of random temp spikes, I try to never go over 275 with anything. Actually, 275 is about what I'm starting to cook everything at.

I've bumped mine up as high as 325 to finish up brisket when it's running behind. Typically I run in the 225-250 range though.
