Sunday Brisket
Here ya go fellers...
I’m makin a brisket for lunches this week (if I’m home anyway)
I trim a packer down but leave it together.
Mainly just remove the major fat pockets.
Using Butcher BBQ prime injection with 2 new to me rubs.
Peppered cow by Simply Marvelous and Jallelujah by Big Poppa Smokers.
Cooking hot and fast at 300*F. (Spearman Method... Mike “PigDaddy” Spearman that is)
He does, fat down for 45 then flip and rotate for 45 then wrap at the 2 hour mark. Then should be 212*F internal at the next 2 hour mark.

Re: Sunday Brisket
I used the Butchers injection on the last brisket that I cooked and it really retained the moisture. The rub that I used was a little bit bland IMO but you live, you learn. I have used some of the BPS and SM rubs (not those 2) and they were pretty good.

Re: Sunday Brisket
Here’s an update.
165*F internal.
Still running lower temp like 250ish.
Gonna pull it off about 203*F
Here what she looks like before wrapping.
Camera flask washed the pic out.

Re: Sunday Brisket
And.... she’s done!
I am certain this is the best brisket I have ever cooked.
The layers of flavor are incredible.
That is a great rub combo.
I put the peppered cow on first then topped with the jalelujah rub.
And butchers prime injection never disappoints.
Here ya go!
Something is wrong with one of the pics. I’ll fix it tomorrow

Re: Sunday Brisket
Nice! Once my new smoker is up and running I am going to try a brisket again. I have done small one's really well but the 15+ pound full packer has been a challenge for me on the equipment I have.
Good to hear the flavor was there.

Looks good Frank.
So well cooked it even defies gravity... Or were you doing selfies with your phone upside down?

Learning generally boils down to "Repetition or the avoidance of pain", some people learn by doing, some by watching and some just have to pee on the electric fence.
