When they start showing up with toothpicks and napkins you might want to consider a higher fence or plan ahead with a spare butt :D I gotta say it's looking good from here. My jr team member (daughter) put 6 cornish hens in the brine at 8 this morning, maybe I can post a few pics when they finally parole me for the day. It flat tuckers a soul out getting paid holiday time while I catch up on my BBQ studies.

If it can't be smoked .... try frying it. It that don't work, it's probably best just left alone

L-) Man o man, Kingsford makes a TON of ash! - been mixing Blue Bag with lump today, but I just had to dump the ash tray because it was choking the fire.

Yeesh, that was a delicate operation. :exp:

Got the hens out of the brine and gave them a good oil rub and seasoning. Fired up the ol' Weber and hopefully in about 4 hrs we will knee deep in some bodacious bird. The best thing about the tornadoes this year was they took down my Pecan tree. Needless to say I should have plenty of pecan chunks for awhile. When my dad came down he offered to chop up the tree for me just to help get everything back in order. Y'all should have seen the look on his face when I told him heck ya just keep the pieces smaller than thick steak! O:-)
