On your tank, use it till it’s empty. With that said, if your gauges are accurate, it won’t take more than a few minutes once the needle hits zero.
On the flip side, you definitely can get a replacement before it’s completely empty. I now keep a spare full bottle in the shop but would sometimes take mine in for an exchange on a Friday so as not to run out over the weekend when my supplier is closed. Nothing worse than running out of gas on a Saturday morning and wasting a good weekend of welding.

Yep, sorely tempted to do this now. I dont want to waste whats left in the tank but dont want to run out either. Some really good progress after a recent steel delivery. Took a few hours to knock this up and get or painted and fitted.

Guys, I had planned to make the offset smoker a reverse flow, but I suspect getting removable baffles even close to air tight will be impossible. So my questions are -
1) do the reverse flow baffles need to be air tight or is a little 'leakage' acceptable?
2) if the reverse flow idea is out the window and it becomes a normal offset, am I right in saying that ideally a collector box at the bottom of the chimney should be as close to the level of the grates as best possible?

Ideally - in my opinion - yes. Most modern pit builders designing standard offsets - Moberg, Mill Scale, Fat Stacks, etc - all have the stack at grate level. There are thousands of others out there that smoke just fine with stacks at the top of the CC so if you’re not able to build it that way, I’m sure it will work out.

Baffle plate needs to be welded in completely. Any leaks will allow heat to escape and possibly create hot spots in the cook chamber. More importantly tho is grease will leak down and is more susceptible to a grease fire.

got a solid 7hours cutting and welding in today great progress but the neighbours must hate me!! Will post a few photos tomorrow.

I'm using a wooden handle on my firebox door, Pete. Bolted on via a 2" bit of plate welded to the door, Wherever there's a join the heat doesn't seem to conduct as much, it's darkened a bit from first fitting but never any danger of it igniting. Some more progress over the last couple of weeks. Nice to get it in its final resting place too as the base alone without lid or doors is probably around 150-180lbs.

Got the grills, gasket and thermometers done. Obviously had to fire it up to season the grills and then though itd be a waste of charcoal not to at least try it at the same time
The lid is heavy but don't know if I need a counter balance or not (yet) wife says she does which makes me wonder should I or not
After the pork chops were ready I fired in my temp probes and (left and right) and over about 80mins there was only about a 5degC drop without touching anything. Will test the offset draw tomorrow all being well.
