This beast aint cheap and it dang sure isn't kosher
but you will have folks chowing down on 2nds long before they stop to ask what is in it.
Blend together 1 lb of ground sausage and 1 lb of ground lamb (the cheapest place I have found for lamb is SAM's but I have to grind it myself).
Pulverize a large onion and a large green pepper(minus seeds). Stir into this a heaping tablespoon of minced garlic and salt and pepper to taste. I love garlic and will at times add even more for my family. Now blend all of this together along with a good dose of your favorite BBQ rub as well as a teaspoon or two of basil and oregano. Shovel the whole mixture into a gallon baggie to flatten out uniformly. Once I have rolled out the baggie flat, I then cut the sides off of the bag and flop the slab over onto a piece of Saran Wrap which makes for an easy rolling process. now that I have rolled her up I grip the end pieces of the wrap tight and continue to roll aross the counter a few more times to snug everything up. Now tuck the ends under the log and toss it in the frig for a few hours to get everything set and you are ready to grab a beer and start smoking. I have done this with and without the bacon wrap but to be honest there are so many flavors going on in this beast that it just isnt needed. Even though it has lamb I usually skip the traditional Gyro cucumber sauce since that flags it as being on the different side and some folks just wont try "different". Cut it thin and glaze it lightly with your house special BBQ sauce. I have had 80 year old women come up and ask me for my BBQ meatloaf recipe. I usually smile and wait for their eyes to pop when I tell them it's lamb. You better make a spare because the guests rarely leave any behind. One last variation: I showed this to my brother in Illinois where everyone seems to know what a good Gyro tastes like and he decided to add small chunks of cream cheese to the roll. He can't help himself from tweeking any recipe I pass on to him. I haven't had the chance to try it but his in-laws have made a standing request for that fatty whenever they come visiting.
