Whew. Long day. It was worth it. A few things I've learned. I need to build a bigger smoker and find a good deal on a trailer. 43 pounds of meat on two drums was pretty crowded and I'd love to do more. I've had a few requests to cater parties, but I don't have enough room. Also, does anyone have an instant read meat thermometer that they really are very happy with? The therm. I have doesn't seem to be accurate or consistent. Can't wait for the next smoke.

That's how it always goes peter. Once your addicted, regardless of the smoker you have, its just never big enough.

Two words... Thermo pen! I was cooking with some guys a couple weeks ago and they have them. Very quick and accurate :)

The meat was a huge hit yesterday. It tasted great reheated too. Good call on the vac bags. As a bonus, the fund for the next smoker build got just a little bigger.

I think I am getting a vibe that there may be a future build in peters smoking ventures.

Peter, the way to do it is.

Get everyone loving your food, then instead of being modest like most all of us can be, accept a buck or two when someone offers.
I used to always say ,,,, naaaaaa keep your money and enjoy, but with the cost of everything these days I turn no money down.

Aside from that, you will surly have someone want you to cater for them. Then the build fund becomes larger again.
