Harry brings up a good point here .... I've been setting out my raw meat to let it warm up a bit for years.
Then I read that colder meat takes in more smoke.
So I quit doing it.
I can't tell any difference in the result. Natural draft would certainly have a little longer recovery time but that's it.
So I quit worrying about it.
Is this something I should be worrying about? Cause I need things to worry about ...

I think you should check the easy bake oven....you look really stressed about it.....

The only thing I let warm is beef steaks for the grill. Everything else is fridge to cooker in a short time.
