Hi everyone, my name is Matt and i live in sunny England, I'm a design engineer and ex chef and one of my main hobbies is smoking. Ive been smoking for about 5 years now, its not that mainstream yet in the UK, if you say BBQ over here it generally means burnt sausages, burgers and half oven cooked chicken finished on a disposable grill. The food itself is gaining popularity over here so hopefully people doing it in their back yards will get popular too. I started with the medium sized WSM but sold that last year and got the large one.

I am in the middle of designing a gravity fed smoker which i will be building (well most of it) and i am trying to put my own original tweaks into what is essentially something which has been designed before, shoulders of giants and all that. Favourite thing to cook has to be pork ribs and belly, i could eat myself into a coma with ribs Image!

Some pics of my last cook up, some ribs and pork cheek with home made bbq and me with my little girl.

I would be keen to swap food recipes and tips etc as well as get some feedback on any of my designs, look forward to chatting with u all. ImageImageImage
