Hello all,
So glad to find and join this incredible community and resource here. Joined here few months ago and been lurking around.
After being obssessed for months with everything smoking meat, I'm finally trying to start up the standard offset smoker build
and have many queries and doubts.
We have a tradition of grilling meat directly above lump coals. In traditional old method to generate smoky flavor here, meat is
grilled over direct fire made using rice straw bales wrapped around the meat. Other than that Tandoor oven is widely used around
here. So these are the the closest methods to getting smoky here.
I have never seen or known anyone using offset smoker or similar method here in my country.
So this is a totally new thing for me and I hope to get it done right...

I've been making 3D model of smoker I want to build using Sketchup first before doing anything with cutting and welding.
Will post the pics/renders soon after its done and will proceed further with metal works only after getting feedback from you guys.
My close friends and buddies know I'm building one... and in every few days, they keep asking - is it done yet? can we bring some meat now
to do the first cook?
