Hello from South Dakota!!
Glad i found this site. Have been smoking for a few years and have done some mods on them. Nothing big, mostly charcoal baskets and grates, but looking to start my first build soon. Lots of good stuff on here and helpful people.

the double pan gravity feed smoker. already purchased the plans. Just going through and figuring it all out now. Plan on starting next month. Since I live in the midwest I smoke in the winters alot so Im debating on what size metal to use. This things going to be heavy I'm sure but I want something that can handle smoking in these types of temps. I have a couple of offsets that have 1/8" or close metal and they have trouble staying at a constant temp even with my guru and they go through alot of charcoal and wood. I have a few events that Ill smoke 8-16 butts for now that I have to do in multiple smokers now. Love to start getting into some competitions as well.

You won't need to go heavy metal with the double pan because it's insulated. I smoked with my mini in sub 0 temps and it performed wonderfully.

The double pan I built a while ago was great. The fact that is so well insulated takes a lot of the worry out of watching the weather. I've cooked in monsoonal downpours and hot days and cold nights. It performed flawlessly.

Thanks for the welcomes and thanks for the comments. glad to hear about others smoking with that size steel. Makes me feel better about the build. Would hate to spend all the blood sweat and tears and have any regrets. I have no doubts I’ll be in here asking more questions. Appreciate all the help.

These things are compact and sealed up pretty well also. An offset has a lot more surface area to dissipate heat from and are more prone to air leaks if not addressed.
The plans are pretty solid...just cut and paste!

Welcome to the crew!
The only trouble I have seen guys struggling with is welding thin metal. But if you're working with a mig welder and can get her to run cool enough you will be fine.

I have seen that as well. My welding skills are amateur at best. Any tips are appreciated. Currently using Hobart Handler 130. My thoughts were to tack and stitch weld until it’s a solid joint so I don’t have any leaks. Hoping by taking my time I won’t get any or very little warpage.
