I never thought to start in the middle before - I always start at the sternum end and pull from there ...
Hmmmm - so THAT's why I'm not the star of a video on how to do that.... :)

Who skins a Yack rib? :P Oh I guess they come in a peel and eat variety! :o
BBQ is just smoke and beers!
Usually more beers than smoke.

I think you'll need a pair of yak-grips to get it started - kinda like vice-grips but with ATTITUDE ... :))
Smokerbuilders do it slow to make it last ... ~O)
