Father's Day Brisket, Ribs, Sausage, and Chicken

It's my first Fathers day tomorrow and my whole family is coming. Figure I would go all out. Brisket is already on. 16lb trimmed 3lb 10oz off to get it right.ImageImageImageImageImage

You're going to have time for a nice long rest after the brisket gets up to temp (and that's a good thing.) If it's 21 hours to dinner, and you're already close to the stall, you're well ahead of the clock.

Ribs are trimmed and rubbed. Wont put them on till the morning. Brisket is coming along good. I'm planning on not wrapping it and only setting an alarm for if it hits 190 internal during the night. Smoke by faith not by sight ;).ImageImageImageImageImage

That's the beauty of the HeaterMeter. It'll maintain his cook chamber temp, and squawk at him when the food is done, runs out of fuel, or any other threshold alarm he sets. I got a lot more sleep when I started using my HM.
