Lady behind the meat counter looked at me like I had a third eye. "You mean the ribs we cut up for stem meat...?" Yessmam them but the biggest 4 bone section you have and not trimmed.

This what's we working with, 5lbs of beef ribs, salt & pepper and leftover kbsauce, 6 hours at 285.ImageImageImage

I’ve never had good luck with beef ribs. Interested to see how yours turn out.

I have done them before and was extremely happy with them. Gotta get a thick section and cook them for about 6 hours testing for tenderness. So far these are looking good.ImageImage
