Mornin chicken

Post by towtruck » November 1st, 2018, 11:23 am

I had to make a test cook on the BBQ as I have not cooked on it yet so I decided to go with chicken legs...I have my times down for these so it would be a good test batch to see how this thing works. Using Lump charcoal things cooked a tad faster and hotter than I like for chicken but it was manageable. I don't have a damper on the bbq so the only control I have it shutting the stack. I think I will use briquettes on it in the future for chicken.

My good morning chicken turned out pretty good.......I got the nice pull back under the skin with the meat and nice flaking with good moisture retention.

I did not have any flare ups either...but there was not much fat on these.

Learning generally boils down to "Repetition or the avoidance of pain", some people learn by doing, some by watching and some just have to pee on the electric fence.
