It has been a while since I’ve cooked a brisket so I figured I would throw one on the smoker. I’m using my stick burner so it’s going to be a long night. Image. Trimmed, rubbed and injected.

Agreed. I hate the overnight smokes but the real wood fire just gives it a little something special on taste. It would be nice if I could convince my wife to toss on every other log tho. A 90 min nap between checking the fire would be nice.

Someone should come up with a log stacker and loader. Can't imagine it would be overly complex.

DT my wife actually did put the wood on the smoker every other time last time we cooked briskets over night. It makes a huge difference.

You just can't duplicate the taste of a stick burner. 2x the amount of work but in the end it is worth it.

Sorry about the long wait, it has been a long 48 hours with very little sleep.Image. I finally got it out of the smoker about 9:30 a.m. I intended to pull it off at 200 degrees but it still probed a little tough so I ended up pulling it at 205 and it carried over to be a little over cooked. It was tender and juicy but there was no chance of slicing it. Image

I’d say overall it turned out pretty decent with no complaints but I was a little disappointed. I used Butcher BBQ brisket injection and it ended up tasting more like a pot roast than a normal brisket. The rub that I used was lacking in any flavor or either it was way overpowered by the injection. I’m thinking it just lacked flavor based on some of their other rubs that I’ve used recently. It was extremely juicy and tender so I shouldn’t complain because I have had a few in the past that were dry and tough.

Glad all turned out. Kinda a bummer to put all that work i it then be disappointed tho. Guess that (disappointment) gives us all an excuse to do it again!

Just out of curiosity, how do you heat your leftovers?

I’ve wrapped in foil on the grill or in the oven and recently tried in a crockpot with a few drops of water but really not to happy with either.

DT, We usually vacuum seal it in small portions with a small amount of the Au jus and then put the bag in a pot of boiling water for a few minutes. When you open it up it's just about as good as when you first cooked it. I sent most of the leftovers home with friends so we just heated it in the oven with some Au jus and it turned out alright.

Many thanks-I gotta break down and get a vacuum sealer...I hear great things about them just can’t get excited about yet another kitchen gadget to put on my counter. However, I smoke and freeze enough I think I’m gonna take the plunge.
