Give me turkey, or give me death!

So I'm in charge of the turkey and since this is the first year with my spanking new smoker I have scowered the earth looking for a specific recipe that lends itself to the reverse flow method. I would like to run at a higher temp as getting up at 6am is a chore. So I am looking for some advice for a 275-300 degree cook. I will be brine the turkey using Alton Browns Honey Brine. I would follow his cook also, but I cannot achieve 400 without running the thing on gas.

From what I have found I am thinking of smoking it standing on its head. That way the dark meat has contact with higher temps and I can say my turkey is protesting the people who wont stand for the national anthem by standing on his head =)) :).

So with that said give it to me. The good, the bad, the tasty.

I always spatchcock poultry so it cooks evenly .

Coming to temp pretty good. The direction of the bird makes the biggest difference since the smoke/heat flows right to left. So white meat to the left dark to the right.ImageImage

What temp did you pull it out? I pulled my turkey out at 160 and my wife thought it should have stayed in longer.

I pulled at 160 white meat and 170 dark. Wrapped in foil and put in a cooler. Was super juicy. I have been told I have to so it exactly the same way every year.Image
