Couldn't pass it up.
I've seen racks there (Aldi) in the 7-7 1/2lb range, but when I saw this monster I HAD to have it!
Cooked it on Independence Day, along with 40lbs of leg quarters,20 ears of corn and 30 meatball bombs (plain,no stuffing).
Had a blast.Dodged the rain and at the end of the day, watched the City fireworks from my front porch with friends.It was a beautiful day, hope yours was just as good.
Oh yeah,made my own Alabama white sauce, Mississippi come back sauce,Big Smo's meat mud and salsa!
The rib was cooked for just shy of 5 hours,uncovered with only salt, pepper and garlic salt.Came out great.Can't wait for lunch!!!
