Busy day tomorrow have 100 lbs of pork loins to cook for a wedding dinner.

I will be injecting these with apple juice before they go on the pit. Probably take them up to 145 wrap and pull off to rest in a warm cooler for 25-30 minutes that's my game plan anyway.

Was a successful burn I was very happy. Unfortunately I didn't get finished product pics the wedding party wanted the food earlier than expected. Meat was moist and full of flavor. They were happy so I was happy. It's a tricky cut of meat to cook since there's no fat in them the injection definitely helps but I'd like to bacon wrap one to see if it helps any.
