Experimenting for a weekly special to have on my food trailer.Gonna have a different special each week like burnt ends,onion bombs,ABTs,etc.
Did close to 20lbs.Completeley filled a large aluminum pan.Brought it to the bar I'll be parked in front of to see if anyone liked it. There were roughly 20 people there.Those that tried it liked it.They weren't as moist as I'd hoped.Got started an hour late and just didn't have the time to splash and wrap as long as I wanted,but all in all,not too shabby.
I just picked up a 55 gal. drum and lid from work,gonna build a UDS and try them in that.
Also made some meatball slider's with 2" pre made meatballs from Restaurant Depot,a #10 can of their Marinara and half slice of provolone.Pretty tasty,but still lacked something, maybe fresh garlic and Basil in the sauce???
Only had 15 of those and they went quick,so I guess they were pleased with those, LOL.
Enough talk, here's the Pron.
As you can see in the one pic, I had just enough room for 2 beer can chickens.
No pics of those,but if necessary I'll pull em out the fridge and snap a few.

Here's lunch DC.Beercan chicken with homemade Alabama white sauce and steakhouse green beans(store bought from Publix).
Ate the chicken cold and I must say,first time trying the sauce and it was DELICIOUS!!!Image

Burnt ends WERE tasty!
Next time though I'll make 1/2 that amount and maybe take some heat away.
Make em more like candy.
And again,if you hadn't tried Alabama white sauce,TRY IT!
Got some vinegar in it,kinda like Carolina Q,but don't let that scare ya.

Straight from Chris Lilly,head Chef and heir to the Big Bob empire.
2 cups Mayo
1 cup distilled white vinegar
1/2 cup apple juice
2 teaspoons of lemon juice
2 teaspoons of prepared horseradish
2 teaspoons of black pepper
1 teaspoon salt
1/2 teaspoon of Cayenne pepper
