Brisket on UDS

I am now going to try out a brisket on UDS. Purchased yesterday and trimmed brisket and separated. I actually trimmed all fat off. Then marinated for 24 hours in beef stock with some garlic powder, onion powder, pepper. After marinating for 24 hours I then put a coat of mustard, my dry rub, plenty of minced fresh garlic and will let it sit for about 8 hours refrigerated. I save all of the fat I trimmed off and have rigged up a small grate that will go over the rack the brisket sits on. I will place all fat on the grate so it drips on brisket. I will keep you posted.

good idea on the bricks to hold the other rack up for your fat to sit on. looking good so far!

Pulled the brisket and wrapped in a cooler to cool for about 1 1/2 hrs. I will get pics up soon.

Turned out good, not as moist as I would have liked. Next time I will not trim all fat off. I will leave about an 1/8".

A lot of guys say they don't foil. Even in my drums I still foil the brisket when it gets in the neighbor hood of 160 ish.

quick note... Please say a prayer or 2 for Bubba. he lost his house in the tornado that hit southern missouri. i talked to him via text and he said his family is fine. a lot of damage was done down there. a lot of people suffered a terrible loss.

Hey Frank, if ya talk to him again.

See what size cloths he may need for himself and his family.

We always have cloths laying around that we don't wear anymore.
With the storms and my work, I am not sure how we would get them to him but we can try.

I have worked several tornado's and its not a cool deal.

Tell um to hang in there. Our thoughts and prayers are there for them, along with all the folks down south.
