Did not brine either one. Just good old mustard and plenty of brown sugar. Fell asleep last night and woke up about 6 am and internal temp on pork was about 199. Pulled them wrapped in foil and packed in the Yeti cooler waiting to be eaten. I am so happy with the UDS and thanks to all on this site who coache me along. I have used the Royal Oak charcoal on both smokes on UDS and I must say I have been impressed. Reviews on www.nakedwhiz.com were not great as they rated the burn time low. I still have a 1/2 basket of charcoal and fire has been burning for about 12 hours now. Gives off a very pleasant smoke, worth trying out.
