Cooking the leftovers from the st louis style ribs

Post by Tom_Heath » April 19th, 2011, 7:06 pm

I didn't get the smoker lit until 6:30 and the meat on about 6:45, I brought the drum up to temp fast tonight.

9 slabs of trimmings, a pork tenderloin, and 4 slices of left over bacon. Those should be eaten by about 8, to tide me over till the rib meat is finished.

Well, we're three hours into this endeavor and I'm about ready for bed. I just found out I am headed your way tomorrow Frank, gotta run to Marshall for a little job.

The tenderloin was out and resting but when I went to slice it, it seems that I was getting a false reading on my thermo since when I cut it. It was obvious that it was not fully done, by the red juices and the touch was just not right. It got wrapped back up and back in the smoker with the wrapped rib parts. Its looking like it will be tomorrow before I post any pics, as soon as I pull the meat and shut down the drum, I am heading to bed.
