Smokin some chicken breasts today

Smokin some chicken breasts today

Makin the brine right now.
1.5 quarts water
1/4 cup kosher salt
1/4 cup brown sugar
1.5 quarts crushed ice from fridge
Heat water salt and sugar until water completely clears. Do not boil because it takes too long to cool the water back down to 38 degrees F.
Then after water mixture clears add
1 tsp garlic powder
1 tsp onion powder
1tsp Cajun seasoning I use tony's
Next add the ice to cool the mixture quickly.
Next stir and put in the fridge until mixture is below 40 degrees F then soak chicken parts for about 1.5 hours. I'm doing 2 pounds of boneless chicken breasts.

So in the meantime while the chicken is brining I decided to have a cold one. This is lion imperial. It has "floaties" in it. It's perty ok stuff. One of the guys brought it over a while back.

With the wind the way it is, I think I will stay at home. I mowed grass today, I have had my fill of the wind. A cold one sounds pretty good as soon as I get home.

Here they are ready to go on. Don't forget to rinse off the chicken after removing from the brine and pat them dry. Try to use a rub with little salt in it as the brine is very salty already. I wrapped them in bacon.
