You could use copper or stainless for the tubing. Only thing is you hafta allow for expansion of the water as it heats and also have a way to control it from boiling. If you didn't the "heat exchanger" could explode. An open water bath and an open loop system could be a possibility.

Don't make the smoker splode, that would be bad.

Frank, my dad lives in the county, and has an expansion tank along side his.hot water heater. I wonder if something like that would work. I'll try a get a pic of it next week.

an expansion tank would help but it also has a certain capacity of it's own. the problem you face is Hydrolic. if you fill the vessel to the rated 100% capacity and all the air bladder is used up you will have a hydrolic lock up and it will "splode" LOL.
also if you fill to say 80% (using round numbers) and then heat the water uncontrollably and it expands an additional 21% you are risking "splosion" :D i like your "splode" word tom :))

That's why I said warmer cabinet - 140 - 150 degrees is a long way from boiling and you could put a simple pop-off valve on it from a double boiler if you're nervous - look neat too!
Smokerbuilders do it slow to make it last ... ~O)
