Fridge smoker help

Hey guys. I just started my fridge smoker project. I could use any helpful advice! Do I ned to remove the insulation between the outer shell and the inner box? Several online sources say to do both. Can my fire box be underneath the smoking chamber? Gas, charcoal, or something else? Some sort of diffuser or damper to regulate heat/smoke? chimney? Air vent?

the answer is yes. the only way you wouldn't need to remove the insulation is if it was regular old fiberglass. but you wont find any like that most likely. you will also need to remove the plastic liner and all plastic parts from the inside also.
Can my fire box be underneath the smoking chamber?
I don't see why not. if you look at a back woods style build or many of the other cabinet smoker designs out there it is perty much the same thing.
Gas, charcoal, or something else?
I believe i would do a charcoal rig. you could do a stumps style build out of it by using a chute on the side. if you know something about PID controllers and electric elements you could do an electric and use wood chips.
Some sort of diffuser or damper to regulate heat/smoke? chimney? Air vent?
you would need air inlets and stack dampers to use charcoal for sure. the electric method would be controlled by a thermostat.

Thanks frank! If by regular old fiberglass you mean the same sort of material used in the walls of your house, that is what I have in this fridge. Also the only plastic that is in the fridge are a few trim pieces. I believe the inner box is metal coated with that porcelain stuff. right now the smoking chamber is separated from the fire box by sheet metal. Should I cut that shelf out completely or leave it there and run a pipe up into a diffuser of some sort? I do have pics and will try and post some tomorrow so you might have a better idea of what I'm working with.

first thing is make sure the shelf is not galvanized.
next next i would prolly install a water pan above the shelf and cut a hole in the middle of it directly under the waterpan. without knowing much about the fridge itself i really cant nail down any hole sizes or anything. post some pics and i'm sure some of the guys will also be able to pitch in their 2 cents.

One less fridge keeping liquid refreshments cold - it saddens the heart.... :((

Looks like an oldy! Good thing it doesnt have the foam insulation in it! As long as you make sure all the plastic and non food grade silicone etc is out of it, it will be fine. The water pan also catches drippings but it acts as a heat sink to help control the heat coming strait off the charcoal. Should look real great when your done!

doesnt adding water to the smoker add water to the meat?

It adds moisture to the cooking environment and adds texture to the outside of the meat but as the meat gets bark on it and continues to heat up internally moisture still comes out of the meat. so it really doesn't do much for adding moisture to the meat. it is the same as a commercial convection steamer like what is used in a restaurant. Brining and injecting are the most effective ways to add moisture to the fibers of the meat.

I would use rope gasket. use some high temp food grade silicone for adhesive. works like a charm!
