Yeah, I know.
I haven't really gave you an update.
Been busier than a one legged man at an arse kickin contest.
So yeah, got the trailer finished last Tuesday,had the Health inspector come out Thursday,we passed!So I immediately called the Fire Marshall to do his inspection.He was there in 30 minutes and done in 10. I walked, literally right next door to City Hall,paid them for a Mobile Food vendors permit and 10 minutes later I was done.
I could now open shop,and I did just that.
I opened Friday night in front of the largest bar on Main St.
Right out in their parking lot.
I get to setup there Friday, Saturday and Actually I can setup anytime,but city code says "for no more than 5 consecutive days". Bastids also say,"not until 3pm",so as to give the brick and mortar stores the lunch crowd.They recently relaxed the code.Use to not be able to start till 10pm!
But I feel I have a great spot for a weekend gig.
Now I need to get another spot in Clearwater for a lunch crowd (Clearwater and the surrounding cities allow you to sell anytime you want).
But then, I'll need to come up with a lunch menu, something quick and easy.
Well, gotta get going right now, here's a couple pics so the Picture Nazi don't give me any grief, LOL.
I haven't gotten the decals on yet, they'll be ready tomorrow.
Did 8 racks of spares on the smoker and 6 beercan chickens (dumped out the beer and used a 1/4 can of water. I know, I know, not a cool thing to do. I should have drank it,but I was running late and working solo, LOL).
Last picture is what the name and artwork will be.They'll only be one surfboard on the right side window with a 24"x24" decal on the left side window. I'll get more pics this weekend.
The City is having a huge music fest this weekend, can't wait, but rain is in the forecast.

They're shutting down Main St. from the bar all the way down to the Safety Harbor Spa(9blocks).4 stages of music with one in our parking lot! Thousands of people throughout the day with an estimated 200 Coastguardsmen and women coming to our bar.We're giving them a donation.We (the patrons of Harbor Bar) do various events throughout the year and raise money for worthy charities.This time it's

Kinda pisses me off,that out of ALL the Gathering's, I had to miss this one.

Thanks Mo,things are starting slow.
Not as busy as I thought it would be, but this gives me time to work out the kinks and find my rhythm.And find out what the people want, so I can figure out a menu.
I'm only open Friday night at 5pm till 3am, Saturday from 3-3 and Sunday from 3-9.
I sell ribs and chicken on Saturday and Sunday only.Friday is mostly bar food like French fries, chicken wings (I have a small pressure fryer), pulled pork sliders, hamburger sliders, hot dogs, chips and salsa, boiled peanuts and such.
I'd like to get a chilli and cheese dispenser to sell loaded nachos/fries/dogs.
And yeah, I love to cook,but it is turning a hobby into a job.Not as fun as it was.
My day job isn't going too good, company was bought out and jobs are slowing down so I'm going to try to take the trailer to the next town (as it stands in my small town I can't open till 3pm.They want the brick and mortar stores to have the lunch crowd) to do a lunch crowd during the week.Might as well, I'm got everything I need (licenses,permits, insurance,etc).
I'll keep you posted on how that goes.

Might be a blessing in disguise starting off a bit slow. Gives you time to iron out the kinks and build a client base and reputation. I think in the food industry word of mouth is the most effective advertising for keeping long term client base going.
