Am planning a new smoker. The stack will exit the CC at rack level the opposite side of the FB. Is the stack height measured from the rack or from the top of the smoker itself? Furthermore, if I use an elbow, is the stack height measured from the bottom - top - or center of the pipe as it exits the CC?

I measure from the top of the CC but I always mount the stack as high as possible on the CC.
Measure Twice.....Cut Three Times.

It doesn't matter where you put or if you use a 90 it measures from the top of the CC.

If you were referring to the length of your stack at the end of your question, I would measure from the center of your 90 (your "take-off"). Example: my calculations called for a 14" long exhaust using 4" diameter pipe. I also used a 4" 90 coming off the cook chamber. The take off on a 4" 90 is 6". Then I added an 8" length of pipe to that.
