I'm not anxious four one either, but the beauty of it is watermelon is cheap won't cost a bundle to give it a try... I think we will call this "vegan brisket "

There was a guy in Exton PA that made jerky out of brisket (along with other stuff) and also had dehydrated watermelon that I tried. It tasted like candy...
