Filleted pork loin filled with stuff

Trying a rolled pork loin stuffed with sautéed sweet peppers, bacon, shallots and provolone cheese then wrapped in a bacon blanket. I would have taken pics of putting it together but I was shooting video of it and forgot to take pics. Should be pretty good. Never made it before though so who knows. Haha Image

Well it was glazed, pulled and rested. Had some heat! I could have pulled it sooner but it was good! Will be perfecting this one. ImageImageImage
