leftover turkey Pozole Verde de Pavo

First off do not let the name Pozole scare you away from this recipe, it is simple and fun to make! I took my leftover turkey carcass and filled the crock pot up about halfway with water and let it run on high for about 5 hours building a fantastic broth for my turkey Pozole. While I was waiting for the turkey carcass to do it magic I made salsa verde. I started with 10-12 tomatillos and one jalapeno (not de-seeded), I sliced the tomatillos and jalapeno up and then sauteed it until the tomatillos and jalapeño were soft. Once it was soft, I removed it from the pan and added it to my blender with 1/2 of a white onion, a handful of cilantro, 1 TBS garlic, and salt to taste. I pulsed it a couple of times and then I placed it in the fridge to rest. After 5 hours I strained the broth removing the bones and fat, and then I poured it in a large saucepan. After the broth was added to a large saucepan, I then added 2 cups of the salsa verde and a ton of leftover turkey (appx. 2000 lbs). Then it to simmer for 20 minutes. For fun, I added a slice of red onion and lime! Yum!

Salsa Verde
10-12 tomatillos
1 jalapeno
1/2 White Onion
3/4 cup Cilantro
1 TBS Garlic

Turkey Pozole Verde de Pavo

7 cups turkey broth
1 recipe Verde Sauce
2 cans of hominy, drained & rinsed well
2 corn tortillas sliced very thinly (optional)
1/2 teaspoon (or more) marjoram
salt & pepper to taste
2 to 3 cups of cooked shredded turkey
a little water, if needed
Garnishes: Red onion, lime wedges, sliced avocado and chopped cilantro
Bring 7 cups of turkey broth to a simmer. Add in Verde Sauce, hominy and marjoram along with the sliced corn tortillas if using. Simmer for about 20 minutes.

Taste for salt and pepper, add turkey and a little water if needed to bring to desired consistency.
