I have been contemplating a final addition to my BBQ sauce line and I finally bottled off the first test batch. Currently I have 3 variations of a BBQ sauce (Original, Spicy and Fire Alarm) that I have been making for folks for about 20 years as a "hobby". This latest concoction will be more like a Hot Sauce with some BBQ'ish flavor notes but the emphasis is on the heat. The idea is that you can take this "Sauce" and adjust your favorite BBQ sauce for heat without giving up on flavor. I'm thinking secondary uses will be Chili and Hot Wings for sure. So I have bottled off about a dozen 5 oz jars and I am looking for flavor panel volunteers. If you enjoy really hot food or you just like to kick things up a notch this might be something you are willing to try out. If you are interested drop me a PM with your shipping name and address and I will get you a bottle in the mail. This will be first come, first served for the guys on this site since as a rule y'all speak your minds. All I ask is that once you get it you post your honest take on the stuff. Flavor - Heat - Saltiness - Texture - Color ... whatever strikes you as being noteworthy be it positive or negative. If you prefer not posting then send me a PM. It's all about eventually making a top end product that will offer something folks will be willing to pay for. I'll take what y'all tell me and knock out a follow up batch in a few months and if you are brave enough we'll do this again. I have some local friends that are doing this taste testing for me as well but sometimes outside opinions can be the most honest.

It has a wide range of fresh and dried peppers used at various percentages. Here are the listed Skoville units
Habanero - 200K, Cayenne - 160K (special order), Chipotle - 15K, Tobasco - 50K, De Arbol -30K, Serrano - 25K and Jalapeno - 5K so I'm guessing it will blend in around 100 - 125K Skoville since it takes a lot to tone down a chemical heat but that's a pure SWAG since there are other components there for flavoring too.
There are some mild roasted and sweet peppers tossed in for flavor as well. Before I ship anything out I am having my "Dang I Love it Hot" person check it out. If she screams MERCY then I will tone it down and repack before I send any out. I want serious heat with good flavor but not stupid heat.
I actually put a warning label to sample cautiously :D

OK, so I finally hooked up with my personal heat judge and she gave the sauce 3+ out of 5 chili peppers on her interpretation of the heat level but admitted that her son felt it was a 4.75. (they sampled as a straight hot sauce dashed on some wings) With that said, I am sending out the requested bottles by priority mail. Thanks again for the opportunity to get some feedback and I hope you enjoy.

I was concerned I had bottled up some liquid explosives but now I'm pretty sure the Burnt Boo Boos will be at a minimum :D

Spent the day running through different temp settings on the smoker using both the exhaust stacks and the intakes. Tossed on a pork loin just to have something cookin in the background. The smoke ring was about 1/2" thick, decent.

The wife whipped up some dressing and field peas w/ snaps for the sides.
Figured a little Irv's Stokin Sauce would go nicely on the field peas :D
Did I mention that stuff has a sneaky kick! :kewl: Sneaky but tasty :D

It is great! It is exactly what solo said it is. perfect for adding extra heat to your bbq sauce. It had bbq hint to it. Plenty of heat!

Most consistent feedback to date was that it was too thick for the shaker top. I will either need to increase the blender time to break down the fresh peppers even further or just eliminate the shaker top all together. I gave out 24 samples total covering 7 different states for some regional responses, no one as of yet has claimed it to be just too dang hot and one guy in Illinois felt it was too salty. He was adding straight to chicken wings, so the background flavors really came through he said. Still haven't heard from DC, so it might end up being too spicy for some after all. :D

If you go into production with it Solo - I think "Boo Boo Buster" might be a good name!

Lot's of cartoon characterization to go with that imagery. ;)

Rick ... you must have missed the posting ... I did a shout out for flavor volunteers on my new hot sauce. I'll hit ya on round 2 if ya like. Or we can just have DC mail ya his unopened bottle. :D

I did put a huge discaimer warning on the temporary label since I was not really sure how the heat would develope over time and I didn't want folks getting their lips fried. I might have made him a bit nervous with the wording.
